Our signature menu is [Jukusei Shoyu Soba]. Broth is based on vegetables mostly onion. [Jukusei] means [aging]. Our soup must be aged like meat or cheese. Therefore it comes out a lot of UMAMI from natural materials. This is a traditional method from Takayama Chuka Soba. No one use this method at Bangkok. Just few place use this way to make ramen even in Japan. Please try!!
